Quanzhou Sets Ambitious Goals for Culinary Standardization

  On October 28, the Quanzhou Municipal Government issued the Three-Year Action Plan for the Establishment of Quanzhou Culinary Standards (2024–2026). According to the plan, within two to three years, Quanzhou aims to build a comprehensive culinary standards system characterized by high quality, diverse categories, extensive coverage, and significant influence. By the end of 2026, the city expects to introduce over 100 new cooking technique standards encompassing all aspects of preparation, service, and management for Quanzhou cuisine. Moreover, efforts will be made to elevate these standards to the national and industry levels.

  The City of Gastronomy, a key designation in UNESCO’s Creative Cities Network, highlights the role of gastronomy in fostering social, economic, and cultural development. Quanzhou is actively pursuing this title, with the development of culinary standards serving as a cornerstone for advancing the local food industry and preserving its gastronomic heritage.

  The action plan emphasizes collaboration between municipal and county levels, involving restaurants, industry associations, and academic institutions in creating these standards. Through standardized production and service, the initiative aims to enhance both food quality and service excellence.

  Under the plan, local governments will form dedicated task forces to oversee the efficient implementation of the standards. Regular workshops, expert consultations, and forums will gather input from various stakeholders to foster a participatory environment. These standards will guide the creation of region-specific culinary benchmarks, such as the “One County, One Signature Banquet” initiative, driving coordinated growth across the Quanzhou food industry.

  The standards will encompass every stage of food preparation, from ingredient selection to cooking techniques, flavour profiles, and service protocols. Incorporating international and domestic best practices will ensure that the standards are scientifically robust and forward-looking, gradually establishing a complete and systematic framework for Quanzhou culinary excellence.

  Additionally, the plan calls for leveraging expertise from research institutions, universities, and professional organizations to strengthen the talent pool for culinary standardization. Esteemed chefs, nutritionists, food scientists, and standardization experts will be encouraged to contribute to research and innovation. Industry surveys, focus groups, and collaborative initiatives will drive the development of practical, consensus-based standards, ensuring their relevance and applicability across the sector.
