Quanzhou Launches Training for Culinary Standards Development in Support of "City of Gastronomy" Bid

  Quanzhou, November 8, 2024 — On November 6, Quanzhou hosted a training session aimed at developing culinary standards for the city’s renowned local cuisine. This initiative is part of a broader effort to elevate Quanzhou’s gastronomic scene as the city accelerates its bid to be recognized as a "City of Gastronomy."

  As signature dishes from each county gain popularity across China, the need for standardized culinary techniques in Quanzhou has become more pressing. This surge in interest has spurred the growth of related culinary industries, raising the bar for quality control and consistency in cooking methods.

  In response to this demand, Quanzhou has unveiled a three-year action plan (2024–2026) to establish comprehensive culinary standards for the city’s cuisine. The plan aims to develop a high-quality, detailed set of standards over the next two to three years, covering all aspects of Quanzhou cuisine—from preparation and service to management.

  A central goal of the action plan is to create a robust standards framework for Quanzhou cuisine, encompassing a wide range of categories with a broad influence. This effort will involve collaboration at both the municipal and county levels, bringing together local restaurants, industry associations, academic institutions, and other key stakeholders. The emphasis will be on standardizing cooking methods and services, improving quality, and enhancing the overall dining experience.

  Additionally, the plan seeks to revive traditional cooking techniques that have faded from use, ensuring that the core elements of Quanzhou cuisine are preserved and effectively passed down. As officials overseeing the plan noted, “The development of culinary standards for Quanzhou cuisine is a key component of our bid for ‘City of Gastronomy’ status and an essential long-term strategy for fostering sustainable growth in the local food industry.”

  Moving forward, the next steps will involve a coordinated approach across the city, with each district tailoring its efforts to reflect local culinary characteristics, ingredients, and cooking traditions. The aim is to establish a clear, standardized approach to cooking techniques that can be easily taught, adopted, and shared—helping Quanzhou cuisine expand its reach and appeal to a broader, international audience.
