His signature creation, "Dragon and Phoenix Bringing Auspiciousness," skillfully blends Quanzhou’s rich culinary heritage with contemporary techniques, resulting in a dish that seamlessly connects the past with the future.

The Dish: A Fusion of Tradition and Symbolism
"Dragon and Phoenix Bringing Auspiciousness" features eel as the “dragon” and black-boned chicken as the “phoenix.” In Chinese culture, the dragon and phoenix symbolize good fortune and harmony. Eel, often regarded as one of the finest sources of protein, is celebrated for its nutritional value and rejuvenating properties. Black-boned chicken, native to China’s Daiyun Mountains, is prized for its tender meat and health benefits, making it a sought-after ingredient in traditional Chinese cuisine.
To prepare the dish, Chef Xu slices the eel into 4 cm pieces and fries them with garlic until golden brown. The black-boned chicken is marinated in a blend of soy sauce, oyster sauce, rice wine, and other seasonings, then sauteed with ginger and garlic in pork lard. After the chicken achieves a perfect golden crisp, a rich stock is added, along with the eel, more garlic, and additional seasonings. The dish is simmered slowly to allow the flavors to meld and fully develop. The final touch is a garnish of fresh spring onions, adding color and a burst of freshness.
